We cook one menu a night, from what the coast and the farms send us that morning. Nothing more, nothing less, nothing frozen.

The experience

Three rooms, one obsession.

The Dining Room

A single nightly seating, forty covers, one continuous menu that moves with the season and never repeats a table.

The Larder Bar

Aperitifs, rare spirits, and a five-course counter menu served in front of the pass, closest to the fire.

Private Dining

The Cellar Room seats up to fourteen beneath the vaults, with a bespoke menu written for the evening.

The kitchen

One hearth. One team. One night at a time.

Everything passes over open flame. The team writes the menu each afternoon around whatever the boats and the growers deliver, then cooks it once, together, for the room in front of them.

You will not find the same plate twice. That is the point.
